No recipes actually know how much spice to use. Most soup recipes say to add like 1/4 teaspoon of salt per gallon.
If you’re going to use a recipe, get an idea of the proportions of spices they use (2 tbsp this, q tsp that) and add roughly according to it. Taste as you go.
