My husband does the same nonsense. When I came home last night, it was 1° outside—I changed into shorts and a tank top because my husband had the heat blasting as though it heats the house faster.
In the car, he cranks up the fan and the heat, and then opens his window (non-smoker).
It drives me bonkers, but I am sure he has a list of things that I do that he hates

When me and our other roommate have brought it up he says that he’s “too skinny” and that it needs to be that hot so he doesn’t freeze. But like put on more clothes??

Many thermostats have a “dad setting” meant as a “calibration”. You can change the display temperature +- 3 degrees from the true temperature. They put it to 76, and in reality it’s set to 73. Dad’s everywhere can thank me.

I think, a lot of times, the source of the problem is that many people don’t understand how HVAC even works. In this case, it seems like op’s wife kinda understands, BUT she’s intolerant of being uncomfortable for even a few minutes. She wants to be warmed up or cooled down as quickly as possible. The problem is these temperature swings are uncomfortable, so it’s just constantly too hot, too cold, too hot, too cold vs just keeping a constant comfortable temperature. For most people it’s somewhere between 65°-75° F. This is insanity AND to be such a control freak about it is…wow.

install a second thermostat and disconnect the heat/cool terminals on this stat. They can make all the changes they want. I have installed “fake” stats in offices in the past and it fixed the temperature issues the admin staff complained of.
R=24v, W=heat, Y=cool, g=fan, c=common
Leave R and C connected so its powered, disconnect all other terminals. Install a new thermostat (with a remove temperature sensor) someplace near the furnace/AC and run the remote temperature sensor into the living area. Wire the new thermostat with all applicable terminals and set it as you see fit. 😉 Not responsible for the divorce if they find out…

As the one who handles the utility bills in our house, she needs to see the statements from your power or gas company. I bet you she’ll be shocked by how much this is costing you two.
After that, try a month in which the temp is set somewhere in the middle and never changes. Once the month is over, show her the new statement.
That, or, rip off the post-it, set it to your preferred temperature, then put the post-it back up.

Until she realized I touched the thermostat.” This is a control issue, as others have mentioned. Stop being a pushover, grow a backbone and either set her straight or leave her forever. Dude this is what you do. Wire it so it has power but doesn’t connect to switch on A/C or heater. Wire up a secret one in house or by a wifi thermostat that you can place in a inconspicuous place and control from your phone. Let her dilly dick with that one while you wield all the power
