20+ years ago me and my roommate frequented Thai Tom in Seattle. At the time, it was 1-5 stars for heat level and the cook prepared your meal right behind the counter where you sit and eat.
We worked our way up to 4 stars and eventually wanted to try 5.
When I told the waitress I wanted 5 stars, the cook slowly pivoted with a look of disbelief that transitioned to a look of “OK then, motherfucker” when he saw me sitting there. All young and white and stupid.
3 bites I think is what I could muster. The distance from 4 to 5 stars was more like 4 to 12 stars. I got a to-go box and left in shame.

I thought Pad Thai was popular _because_ it isn’t spicy. Order Som Tam, or Pad Krapao, or a Tom Yum/Kha Gai… I once ordered a Som Tam (Green papaya salad) and just said normal spicy and yeah it was, uh, intense

I did this years ago. Wife and I would get pad thai, I’d order it Thai Spicy ( the tier below being “mexican hot” per their menu)
So one time I get mild the next time I ask “Could one order be extra spicy?” Big mistake. I was ruined for weeks. My tongue was burned if I ate anything remotely flavored or spiced, I would be in tears. I was terrified it was permanent damage, I never complained again.

This can be so frustrating. The Thai restaurant near me served me one of the spicest meals I’ve ever eaten a few years ago and it was perfect. I love spicy food. I’ve gone back a few dozen times since then and every single time I tell them to make it as spicy as they can and they never give me anything spicier than Sriracha…
The food is still delicious whether it’s spicy or not, but damn do I crave that first spicy meal they gave me. I have the same issue with another Thai restaurant near me too.
Edit: Side note, there is Pakistani Nashville fried chicken place near me that has a spicy sandwich that you need to sign a waiver for saying you won’t sue them if you get injured from the extreme spice level. It also is barely spicier than Sriracha!! Wtf
