Not quite a fix, but if you dig (carefully) out the filler, clean the gap, and replace it with white Silicone rubber, it will be more flexible and should last.
call a counter guy, he will remove the crap and fill with material that is what countertop is made of and when he is done you wont see the seam at all
A stone countertop contractor can order a color matched epoxy, and use a suction levelling tool to level and fill that seam. If you know the manufacturer and color of that quartz, even better. You will still see and feel it but it can be hidden pretty well.
There’s a variety of filler options, whether you want a cement mix, or resin, or epoxy, or silicone. You can either try to match the colour, or deliberately pick a contrasting colour. For example you can get bright blue pool sealant, if you wanted a bright blue line in the counter.
If this is a food prep counter some people like silicone since when it gets discoloured or worn down from washing, you can just scrape it out and apply new.
Grout or cement mix can sometimes get discoloured, like starting off white or grey and ending up brownish. Some people don’t like the sight of that.
A T shaped trim piece can totally work, but sometimes you need to really scrub at the edge to avoid buildup of stuff.
