INGREDIENTS:

* 1 tbsp olive oil

* 1 large leek finely chopped

* 250g baby spinach

* 150g frozen peas

* 500ml chicken or vegetable stock

* 100ml sour cream

* 500g fresh gnocchi

* juice of 1 lemon

* 50g parmesan

* chilli flakes

* 80g walnuts chopped

* salt and pepper

METHOD:

1. gently saute leeks in olive oil over medium heat. Add some salt to help them soften
2. stir in stock and sour cream
3. add gnocchi and cook for one minute
4. add spinach and wilt (about a minute)
5. add peas and stir
6. add lemon juice, parmesan and chilli flakes to taste
7. season well with salt and pepper
8. plate up and top with chopped walnuts
