Unironically I want a sequel where Remy starts no longer being able to do such a job, then as Linguine enters the kitchen he realizes that the ingredients speak to him almost as if Remy was still there, pointing out what to add next, and he makes a delicious meal without assistance.

If you watched the movie, youโd know Remy was teaching the other rats to cook, who will almost certainly be skilled enough to take over the business when he dies.
This isnโt me noticing a background detail, or creating a fan theory. This is the emotional climax of the movie. Heโs teaching the other rats how to cook.
Also, Remy would be classified as a domesticated rat by the end, even if he did spend his early life in the wild. This would likely mean he would survive up to five years, and die from old age. Rather than avoidable sickness, predators, or misadventure.

A captive rat lives around 3-5 years when taken care of. We know Remy is a juvenile rat (smaller than father and other adult rats), so he might have a good 3-4 years left. Most restaurants last 3 years. Ego wants to get his money and get out

By the time Remy dies, linguini would have learned how to cook all his stuff I think, it’d be hard not to when you’re being puppeteered the whole time. So linguini will just take over and all will be well

Let’s suppose that a mouse in captivity lives 3 years.
Let’s further suppose remy is 1 year old. He seems young among his peers. Perhaps his magic nose starts to weaken when he turns 2.
If Remy comes up with 1 new recipe each week for 1 year, that’s 52 new recipes.
That’s a core menu of 20 items.
Rotating seasonal specials of 10 items.
And 22 menu items to substitute when people get tired of the old items.
After 5 years, you can bring back old menu items to a new audience and/or to evoke nostalgia from loyal customers.
This will give you the savings you need to invest in more chefs long term, who can come up with newer recipes. Perhaps they won’t be as good as Remy’s, but at that point the restaurant can coast on the legacy for a long time.
It’s a fine investment. Ego doesn’t need Remy in the kitchen 10 years from now. He needs to write down what Remy does and milk it for decades.

that’s the avg lifespan for a real life rat in the real world. you know what real life rats in the real world don’t do? TALK.
so why are we applying real-world logic to a fictional rodent? who’s to say the avg lifespan of a rat in this world isn’t 400 billion years? pointless.
