# Ingredients
* 225g plain flour
* 1 tsp bicarbonate of soda
* 1/2 tsp cream of tartar
* pinch of salt
* 100g unsalted butter/margarine
* 175g caster sugar
* 1 tsp lemon juice
* 3 tbsp milk
* 2 well ripened bananas, mashed
* 2 eggs, beaten
* sprinkling of granulated sugar to finish
# Method
1. Sift in the flour, add bicarbonate of soda, cream of tartar and salt into a mixing bowl.
2. Cut the butter/margarine into small blocks, add to the flour mixture and rub into a breadcrumb consistency.
3. Mix in the sugar thoroughly.
