**Ingredients:**

* 1/3 cup of white rice flour
* 1/4 cup of cornstarch
* 1 teaspoon of cassava starch
* 1/2 teaspoon of xanthan gum
* 1/2 teaspoon of flaxseed flour
* 1/4 teaspoon of salt
* 1 teaspoon of active dry yeast
* 1/3 cup of sugar
* 1 teaspoon of vanilla extract
* 1/2 cup of cold water
* 2 tablespoons of oil
* 1 teaspoon of apple cider vinegar
* 1/3 cup of candied fruit or chocolate chips

**Directions:**

1. Mix all dry ingredients.
2. Add the vanilla extract, half the amount of cold water, oil and vinegar.
3. Mix with a spatula or with the paddle attachment in the mixer. Let it beat for 2 minutes at medium speed.
4. Check the texture of the dough, it should be a sticky dough, not dry, not oily, easy to mix with a spatula or spoon, that sticks to your hands and the spatula. If necessary, add a little more water while beating until it reaches the the desired consistency.
5. Turn off the mixer and, lastly, mix in the chocolate chips or dried fruits, using a spatula.
6. Place all the dough inside the mold (if it is not paper, grease it with oil).
7. Let the dough ferment and rise in a warm and humid environment for 1 to 4 hours, or until it rises to the edge of the mold. The fermentation time can reach up to 24 hours depending on the conditions of the environment.
8. Bake in a preheated oven (for at least 10 minutes) at 180 degrees for 35 to 40 minutes. Bake for longer if necessary.

A Delicious and Inclusive Holiday Tradition: Vegan and Gluten-Free Christmas Cake

As the holiday season approaches, many of us begin to think about traditional Christmas treats that bring joy and cheer to our loved ones. For those with dietary restrictions, however, the thought of festive baking can be a bit daunting. Fear not! With a little bit of creativity and some simple substitutions, you can create a vegan and gluten-free Christmas cake that’s just as delicious as its traditional counterpart.

The Magic of Alternative Flours

The first step in creating a vegan and gluten-free Christmas cake is to choose the right base. While traditional Christmas cakes often rely on refined wheat flour, there are several alternatives that can provide a similar texture and flavor. Some excellent options include:

  • Almond flour: Made from ground almonds, this flour is rich in protein and has a nutty flavor that pairs perfectly with sweet spices.
  • Coconut flour: A low-carb, high-fiber option that’s also rich in healthy fats.
  • Oat flour: A popular choice for those with gluten intolerance or sensitivity, oat flour is a great source of fiber and protein.

The Power of Plant-Based Milk

Traditionally, Christmas cakes are made with butter or cream, but for a vegan version, we’ll need to find an alternative. Plant-based milks like almond milk, soy milk, or coconut milk are great options. You can also use fruit purees, such as pumpkin or apple, to add moisture and flavor to your cake.

Spices and Flavorings

No Christmas cake would be complete without a blend of warm spices and fragrant flavorings. Try using a mix of cinnamon, nutmeg, and ginger to create a classic warming blend. For an extra boost of flavor, you can also add a splash of vanilla extract or a pinch of salt to balance out the sweetness.

The Recipe

Here’s a simple recipe to get you started:

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, combine the almond flour, coconut sugar, baking powder, and salt.
