Fresh Snow Ice Cream

**Ingredients:**

– 5 quarts fresh, clean snow
– 1 cup heavy cream
– 3-4 tbsp granulated sugar 
– vanilla extract (optional)

– toppings of choice

**Instructions:**

1. Add sugar and 1/4 cup heavy cream to a sauce pot and warm gently just to dissolve sugar. Add the remainder of your cold cream and vanilla 

2. Gather fresh, untouched snow, ideally off an elevated surface such as an outdoor table. Avoid the bottom layer that comes in contact with any surfaces. 

3. Mix the snow and cream together gradually. It should shrink down to about 2 cups of ice cream. Use immediately or freeze for later

4. Top with desired toppings such as canned peaches, boba, and honey (pictured) or any other toppings. Matcha powder, fruits and berries, caramel sauce, crumbled oreos, or any number of things make great choices.

**Variations:**

– Use Greek yogurt instead of heavy cream for a frozen-yogurt dessert. 

– use half cream and half cold coffee for coffee flavored ice cream 

– use matcha for a green tea ice cream 

**Substitutes:**

– dairy free creamers and coconut milk can be substituted for cream 

– sweetened condensed milk also works well as a base

**Note:** depending on the density and texture of the snow your may need to use more or less to get the ideal result. Be sure to gather more than you think you’ll need.
